Shimizo-No-Mai Pure Dawn is clear in appearance. The aroma has hints of orange peel and light floral notes, with an underlying minerality. It’s fresh and well-structured, with subtle notes of pear and Fuji apple. Creamy mouthfeel, finishes soft-sweet to dry. Serve slightly chilled.

pure dawn is the Junmai Ginjo selection of the Pure Series. Ginjo collectively refers to the four highest grades of sake. Junmai ginjo must be made with rice that has had a minimum of 40% of the rice polished away and use only rice, water, koji and yeast. The result is an aromatic sake that has a fresh flavor profile with food-friendly structure.

Length/Type of Fermentation:

The rice grain is milled to 55% of its original size (most other Junmai Ginjo sakes are milled to only 60% of their original size)
