Tasting Notes
The typical nose of its appellation: floral, toasted, enriched with the fruitiness of Chardonnay. The attack is frank, the mouth round, elegant, with a mineral finish.
Food pairings: poultry in white sauce, roast monkfish
Winemaking
Fermentation: 100% in oak barrels, 30% of which are new. Daily stirring, thermoregulation at 18 and 19°C.
Ageing: 18 months in oak barrels, weekly stirring. Barrels of 36 months of drying whose wood comes from forests of the center of France (selection of fine grains). Light, slow and long toasts deep in the wood.
About Manuel Olivier
Coming from a family of four generations of farmers, workers of the land, Manuel, from childhood, shows a particular interest and predisposition for wine. He works on the farm of his parents, producers of small red fruits and Cassis de Bourgogne, but his ambitions and desires are different. Barely 20 years old, he carried out his first vinifications. Five years later, he made his dream come true and settled as a winegrower in the small hamlet where he grew up.
Beginning simply with a few hectares of vines in the Hautes Côtes de Nuits, he built and developed the estate. Out of attachment to its roots, the family estate continues to produce small red fruits and organizes a free-picking each summer. eager to discover new terroirs and take up new challenges, the estate acquired vines, this time on the Côte de Nuits and the Côte de Beaune.
Over the years, the estate has grown and the range of wines has become complete, displaying Regional, Crémants, Villages, Premiers Crus and Grands Crus appellations.
