It offers notes of rich mulberry, blackberry, hints of tobacco, and a savory meatiness on the nose; the dark-berried fruit continues on the palate while mixed with baking spices, clove, and olive tapenade. The long tannins have you rolling your tongue around the top of your mouth leaving you yearning for more.
About Cordant Winery
David and DeAnn Taylor founded Cordant Winery in 2014 with the goal to produce Pinot Noir and Rhone-style wines that would become favorites in their own cellar, and hopefully those of friends, family, and customers.
Today we make about 3000 cases of wine per year, from Monterey County in the northern California Central Coast moving south through Santa Barbara County, a distance that covers almost 200 miles. Certain wines we vineyard-designate which allows us to present those vineyard sites through their unique terroir, micro-climates, and soil conditions. It is always a joy to taste vineyards side-by-side to understand their unique contributions. But we blend other wines throughout the range of our Central Coast vineyards to offer the best combined contributions and complexity we can nurture from these vineyards. In fact, in a given year we source fruit from 16 to 20 different vineyard sites for our wines. With so many different vineyards, it allows us to mix it up a bit each harvest.
The most important decision for making delicious wine is the vineyard source. What goes into, and what makes a vineyard special, is more than its ability to create a good wine. The vineyards we enjoy most are the ones that have great people behind them, and great processes for managing their vineyards. So much communication and trust goes into farming. As a result, the places where we develop the best relationships usually result in the best wine.
Another important aspect with our chosen vineyards is variety, where the California Central Coast has so much to offer. Whether that is the coastal vineyards of Santa Lucia Highlands or Santa Rita Hills, or the limestone rich sites of westside Paso Robles, and everything in between. Our goal is to exploit all it has to contribute.
