Tasting Notes

Manual harvest in boxes of 18 kg of grapes. In the winery, a selection of the clusters is carried out, destemming and grinding through rollers. Chilled for 48 hours. at 12º C. Alcoholic fermentation with selected yeasts in a small stainless steel tank. Control of temperatures between 26 and 28º C. Maceration time with the pomace of 25 days. Natural malolactic fermentation. Two rackings in winter to remove coarse lees. Soft pressing.

The VINORUM brand was taken from the Latin phrase “Vinum regum, rex vinorum” , which means “Wine of kings, king of wines” . This is the description that Louis XIV made about the Hungarian wine of Tokaji Aszú, which was one of the most valued wines of the 17th century, to the point that Pedro I of Russia sent his Cossacks to watch over the cellars and roads through which wine was passing through or for the caustic Voltaire to affirm the following about it: “this wine invigorates every fiber of my brain and produces in the depths of my soul an enchanting flash of intelligence and good humor”.
