Tasting Notes

 

It is a deep gold colored with silver highlights.  Intense and rich. It opens with aromas of cooked pear, peach, enhanced by some roasted almonds. The base notes are softer, with quince paste and fig tree. The bubble is fine and refreshing, embellished with zests of lime. The balance in the mouth evolves quickly to a nice sweetness, and a touch of white nougat. The finale is ample and rich.

About Waris et Filles

Following business studies for me, Virginie, and viticulture studies for Bertrand, we spent five years in Provence working amongst the vineyards and olive groves. We were eventually swept up by our heritage; our family history. Seven hectares of vineyards in Champagne is our precious legacy and our great responsibilty which demands of our loving and giving in equal measures. We consider ourselves artisan winemakers, happy and proud to raise our vines and to produce our wines with infinite care and with a deep sense of satisfaction in a job well done.

We grew up amongst the families of Champagne with the sound of bubbles whispering in our ears! And, over time, our early vocation has matured into our life’s work.

Over the generations, our estate has grown in tandem with the appellation and our own expertise. Nature has done her work well! It all began in Avize on the Côte des Blancs with our great-grandfather Vincent Waris, and then in the region of Coteaux du Sézannais and Aube.

Anchored in tradition but always looking fowards, we are committed to the protection of the land from which we draw our living. We are passionately committed to a healthy and respectful partnership with our environment.

We are the fourth generation to cultivate nearly seven hectares of land dotted through different regions of Champagne. Our vineyard is made up of 25% Chardonnay (Côte des Blancs and Sézannais); 68% Pinot Noir (Sézannais, Épernay and Aube); and 8% Pinot Meunier (Ardre Valley). These discrete terrains and their soils, now classified as World Heritage sites by UNESCO, enable us to vinify these three Champagne grape varieties. This diversity of soil and climate is the secret to the rich aromatic notes of our champagnes.

Our mission

Throughout the growing cycle, we manage our vineyards with care and consideration. We use only 100% organic fertilizer, never introducing chemical pesticides into the soil or vines. This way of working the land, with patience and perseverance, enables the vines to spread their roots deep into the earth thus making the best of the nutrients in the soil. Our methods are fully in-keeping with the rules of the Champagne region, our reward being the strong and healthy growth of our plants; the plumpness and rich colour of our grapes; and the simple pleasure of harvesting the resultant exquisite treasure by hand.
