One of the gems in the lineup is the 2017 Cotes Catalanes Secret De Schistes which is all Syrah from the higher elevation sites of schist soils. Aged 17 months in new oak, it has a beautiful perfume of crème de cassis, blue fruits, classy oak, and graphite that opens up with time in the glass. Possessing full-bodied richness, ultra-fine tannins, and again, this voluptuous, weightless texture, it’s a brilliant wine that will keep for over a decade. This is one of those wines that blends elegance and richness brilliantly.

Biological agriculture

Organic farming is a specific mode of production that preserves the environment and biodiversity, characterized by the non-use of synthetic chemicals and GMOs (Genetically Modified Organisms).

The organic winegrower fertilizes the vines with compost and green manures. In order to protect it from diseases and pests, he applies preventive methods, uses natural substances or has recourse to biological control. Weeding is done mechanically or manually. By paying particular attention to the life of the soil and allowing good deep development of the roots of the vine stocks, the organic winegrower promotes the expression of the terroirs.

Since August 1, 2012, the entire production process, from grape to wine, has also been governed by European regulations, so we can speak of “organic wine”.

Organic production methods comply with precise specifications, with:

  • – Certification by a body approved by the public authorities for its competence, independence and impartiality.

  • – Strict and systematic checks in the vineyards and in the cellars, with sampling and analysis.

The regulation relating to the mention “organic wine” implies:

  • – Prohibition of certain winemaking practices (strict limitation of usable inputs).

  • – A limitation of authorized sulfite intakes (which remains in all cases lower than the maximum authorized in conventional).
